Salmonella bacteria are the most frequently reported cause of food poisoning in the United States. Anyone may be affected by salmonellosis (an infection caused by salmonella bacteria), but it is most dangerous to infants, the elderly, and people with weak immune systems. In these individuals, the infection may spread from the intestines to the blood stream, and then to other body sites, resulting in serious injury or death unless the person promptly treated by a health care professional.

Causes and Symptoms of Salmonella

Salmonella food poisoning can arise when someone eats undercooked food such as chicken or eggs. Any food can become contaminated during preparation if conditions and equipment for food preparation are unsanitary. Symptoms of salmonellosis generally appear about one to two days after infection, and include fever, nausea, vomiting, diarrhea, and abdominal cramps and pain. Salmonella infections usually end in about five to seven days if treated properly with antibiotics. Other infections that can be caused by salmonella include:

  • Bone infections
  • Lung infections
  • Joint infections
  • Infection of the sac containing the heart
  • Infection of the tissues, which cover the brain and spinal cord
  • Infection of the liver
  • Infection of the kidneys
